Paleo Gluten-Free Gingerbread Loaf

Ingredients

  • 4 eggs
  • 1 cup mashed cooked peeled sweet potato
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut sugar
  • 2 tbsp melted ghee or butter
  • 2 tsp ginger
  • 2 tsp cinnamon
  • 1 tsp baking powder

Icing

  • 1/3 cup coconut butter
  • 1/3 cup maple syrup

Preparation

  1. Preheat oven to 350F

  2. Whisk the eggs in a bowl

  3. Add in the sweet potato, coconut flour, maple syrup, coconut sugar, melted ghee or butter, ginger, cinnamon, and baking powder

  4. Mix well with a hand mixer until the sweet potato is well blended

  5. Line a loaf pan with parchment paper and add the batter

  6. Bake for 50-55 minutes, check with a toothpick to see if done

  7. Let cool before removing from pan

Icing

  1. Melt coconut butter and maple syrup together for 30 seconds

  2. Stir and melt more if not mixed

  3. Let sit for 10 minutes

  4. Drizzle over the cooled loaf
