Paleo Gluten-Free Gingerbread Loaf
Ingredients
- 4 eggs
- 1 cup mashed cooked peeled sweet potato
- 1/2 cup coconut flour
- 1/2 cup maple syrup
- 1/4 cup coconut sugar
- 1 tsp molasses (optional)
- 2 tbsp melted ghee or butter
Spices
- 2 tsp ginger
- 2 tsp cinnamon
- 1 tsp baking powder
Icing
- 1/3 cup coconut butter
- 1/3 cup maple syrup
Preparation
Preheat oven to 350°F.
In a bowl, whisk the eggs.
Add all remaining ingredients and mix well with a hand mixer until the sweet potato is well blended.
Line a loaf pan with parchment paper and pour in the batter.
Bake for 50-55 minutes or until a toothpick inserted comes out clean. Allow to cool before removing from the pan.
Icing
Mix the coconut butter and maple syrup together.
Melt in the microwave for 30 seconds, stir, and melt further if needed until fully combined.
Let the icing sit for 10 minutes before drizzling over the cooled loaf.
Tips
Mash and cook the sweet potato ahead of time for convenience.
Molasses is optional and can be added for extra flavor.
