Vegan and Gluten-Free Cinnamon Rolls
Ingredients
- 1 1/4 cup oat flour
- 1 cup vanilla Greek yogurt
- 2 tablespoons maple syrup
- 1 teaspoon baking powder
- 1 teaspoon apple cider vinegar
Cinnamon sugar mixture
- 1/4 cup coconut sugar
- 1 teaspoon cinnamon
Topping
- coconut butter
Preparation
Mix all of the dough ingredients together, roll into a ball, and if it feels too sticky, add an additional 1/4 cup oat flour, then let it chill for 30 minutes.
Place parchment paper on a flat surface and add extra oat flour to prevent sticking.
Roll out the dough to about 1/4 inch thick into a rectangle, greasing the rolling pin with non-stick spray if necessary.
In a small bowl, mix the cinnamon sugar mixture.
Sprinkle the cinnamon sugar mixture on the dough, leaving a small border around the edges.
Slice the dough lengthwise into about 5 strips.
Roll each strip into a cinnamon roll shape.
Place the rolls in a small greased baking dish.
Bake at 350°F for 20 minutes.
Add melted coconut butter on top and sprinkle with extra cinnamon.
Notes
Use gluten-free oat flour and vegan yogurt to maintain dietary restrictions.
This recipe makes 5 small cinnamon rolls.
