Festive Gingerbread Cinnamon Rolls
Ingredients
- 1 1/3 cup oat flour (gluten-free option)
- 1 cup vanilla Greek yogurt (vegan option available)
- 2 tbsp maple syrup
- 1 tsp baking powder
- 1 tsp apple cider vinegar
- 1/4 cup coconut sugar
- 1 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp cloves
Preparation
Mix all the cinnamon roll ingredients together and let the dough chill for 30 minutes.
Place parchment paper on a flat surface and dust with oat flour to prevent sticking.
Roll out the dough to about 1/4 inch thickness, greasing the rolling pin or your hands to prevent sticking.
In a small bowl, combine the gingerbread sugar mixture (coconut sugar, cinnamon, ginger, nutmeg, cloves).
Sprinkle the gingerbread mixture evenly over the rolled-out dough, leaving a small border.
Slice the dough into about 5 long strips.
Roll up each strip tightly to create cinnamon rolls.
Place the cinnamon rolls in a small greased baking dish.
Bake at 350°F (175°C) for 23-25 minutes.
Once baked, drizzle melted coconut butter on top and add optional sprinkles.
