Festive Gingerbread Cinnamon Rolls

Ingredients

  • 1 1/3 cup oat flour (gluten-free option)
  • 1 cup vanilla Greek yogurt (vegan option available)
  • 2 tbsp maple syrup
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • 1/4 cup coconut sugar
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves

Preparation

  1. Mix all the cinnamon roll ingredients together and let the dough chill for 30 minutes.

  2. Place parchment paper on a flat surface and dust with oat flour to prevent sticking.

  3. Roll out the dough to about 1/4 inch thickness, greasing the rolling pin or your hands to prevent sticking.

  4. In a small bowl, combine the gingerbread sugar mixture (coconut sugar, cinnamon, ginger, nutmeg, cloves).

  5. Sprinkle the gingerbread mixture evenly over the rolled-out dough, leaving a small border.

  6. Slice the dough into about 5 long strips.

  7. Roll up each strip tightly to create cinnamon rolls.

  8. Place the cinnamon rolls in a small greased baking dish.

  9. Bake at 350°F (175°C) for 23-25 minutes.

  10. Once baked, drizzle melted coconut butter on top and add optional sprinkles.
