Vegan and Gluten-Free Monkey Bread
Ingredients
- 2 1/2 cups + 2 tbsp oat flour
- 3 tbsp arrowroot flour
- 1 cup oat milk
- 2 tsp apple cider vinegar
- 2 tbsp maple syrup
- 1 tsp vanilla
- Sprinkle of salt
- 2 tsp baking powder
Cinnamon sugar
- 1 1/2 tbsp cinnamon
- 1/3 cup coconut sugar
- 1/4 cup melted coconut oil
Icing
- Melted coconut butter
Preparation
In a small bowl, mix together the oat milk and apple cider vinegar and let it sit for 10 minutes.
While waiting, mix the cinnamon sugar ingredients together in another small bowl.
In a large mixing bowl, add the rest of the monkey bread ingredients and then add the oat milk and apple cider vinegar mixture.
Mix well.
Press the mixture into a ball; add a little more oat flour if it is too sticky.
Grease a small loaf pan.
Grease your hands and roll the dough into small balls; approximately 15 pieces.
Dip the balls into the cinnamon sugar mixture and place them in the loaf pan.
Bake for 30 to 32 minutes at 350 degrees Fahrenheit.
After removing from the oven, add melted coconut butter on top.
