Easy Vegan Gluten-Free Blueberry Waffles
Ingredients
- 3/4 cup gluten free oat flour
- 1/2 cup + 2 tbsp almond milk
- 1 tbsp cashew butter (any nut butter works)
- 1 tbsp maple syrup
- 1 scoop vanilla protein (use vegan to keep the recipe plant based, I used @ritual. Discount code: 10PEYTON)
- 1 tsp cinnamon
- 1/2 tsp apple cider vinegar
- 2 tbsp arrowroot flour (can sub cornstarch)
- 2 tsp baking powder
- 1/2 cup blueberries
Preparation
Mix everything together in a bowl besides the blueberries.
Mix well.
Fold in blueberries.
Heat and grease a waffle maker.
Add batter; it makes about 4 mini waffles total.
Cook according to the timer on the waffle machine.
Notes
Use a mini waffle maker as this recipe was tested with one and not verified for regular waffle makers.
Serve with warmed blueberries and a little powdered sugar for enhanced flavor.
