Vegan Gluten-Free Mini Pancakes

Ingredients

  • 1 cup of oats
  • 2 tbsp almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp maple syrup
  • 2/3 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract

Optional toppings

  • Toppings of choice

Preparation

  1. Put all ingredients in a blender and mix until smooth batter.

  2. Heat 1 tsp oil in a frying pan.

  3. Put the batter in a piping bag and carefully pipe small pancakes into the hot pan.

  4. Flip them quickly, otherwise they burn.

  5. Serve the mini pancakes with toppings of choice.

Notes

  1. This recipe is vegan, gluten-free, and soy-free, and can be prepared in 20 minutes.
