Vegan Gluten-Free Oat Flour Waffles

Ingredients

  • 3/4 cup gluten free oat flour
  • 1/2 cup almond milk
  • 1 tbsp cashew butter (any nut butter works)
  • 1 tbsp maple syrup
  • 1 scoop vanilla protein (use vegan to keep the recipe plant based, I like @nuzest_usa)
  • 1 tsp cinnamon
  • Splash of vanilla extract
  • 1/2 tsp apple cider vinegar
  • 2 tbsp arrowroot flour (can sub cornstarch)
  • 2 tsp baking powder

Preparation

  1. Mix all ingredients together in a bowl.

  2. Heat and grease a waffle maker.

  3. Add batter to the waffle maker; this recipe makes about 4 mini waffles.

  4. Cook according to the timer on the waffle machine.

Notes

  1. Use a mini waffle maker as it has not been tested in a regular one.

  2. Top with caramelized banana and maple syrup for serving.
