Vegan Peanut Butter Banana Baked Oatmeal

Ingredients

  • 2 cups old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 over ripe bananas
  • 1 1/2 cups almond milk
  • 1/4 cup creamy peanut butter
  • 2 tablespoons maple syrup
  • 1 tablespoon ground flaxseed
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat oven to 375°F and grease a baking dish

  2. In a bowl, mix together the oats, cinnamon, baking powder, and salt

  3. In another bowl, mash the bananas and stir in the almond milk, peanut butter, maple syrup, ground flaxseed, and vanilla extract

  4. Combine the wet and dry mixtures until well blended

  5. Pour the batter into the prepared baking dish and spread evenly

  6. Bake for 30-40 minutes or until golden and set
