Blueberry Baked Oats Breakfast

Ingredients

  • 1 cup gluten-free rolled oats
  • 1 egg
  • 3/4 cup almond milk
  • 3 tablespoons maple syrup
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 tablespoons shredded coconut, divided
  • Sprinkle of sea salt
  • 1/2 cup blueberries

Optional additions

  • Nuts, seeds, or chocolate

Preparation

  1. Preheat the oven to 350 degrees.

  2. Combine all ingredients in a bowl.

  3. Spray two oven-safe ramekins with cooking oil.

  4. Divide the mixture between the ramekins.

  5. Bake for 30 minutes.

  6. Sprinkle with extra coconut and optionally serve with a dollop of Greek yogurt.
