Blueberry Baked Oats Breakfast
Ingredients
- 1 cup gluten-free rolled oats
- 1 egg
- 3/4 cup almond milk
- 3 tablespoons maple syrup
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 2 tablespoons shredded coconut, divided
- Sprinkle of sea salt
- 1/2 cup blueberries
Optional additions
- Nuts, seeds, or chocolate
Preparation
Preheat the oven to 350 degrees.
Combine all ingredients in a bowl.
Spray two oven-safe ramekins with cooking oil.
Divide the mixture between the ramekins.
Bake for 30 minutes.
Sprinkle with extra coconut and optionally serve with a dollop of Greek yogurt.
