Blueberry Banana Baked Oats

Ingredients

  • 1 flax egg
  • 1 mashed banana
  • 1 cup blueberries (divided)
  • 1 tsp baking powder
  • 1 heaping tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 2 tbsp melted coconut oil
  • 1/2 cup chopped walnuts
  • 2 cups gf oats
  • 1/4 cup maple syrup
  • 1 3/4 cup cashew milk
  • 1 banana sliced
  • Yogurt or kefir

Preparation

  1. Preheat oven to 375.

  2. Grease a 8/8 or desired baking dish.

  3. In large measuring cup prepare flax egg and set aside.

  4. Mash banana into flax and add baking powder, spices, salt, vanilla and coconut oil and stir together.

  5. Add in walnuts, oats, maple syrup and cashew milk and 3/4 cup blueberries.

  6. Pour oat mixture into pan and place sliced banana and remaining blues on top.

  7. Place in preheated oven for 40-45 minutes

Tips

  1. Top with coconut kefir, jam, and granola for serving.

  2. Cut up leftovers into bars and snack any time for a yummy healthy snack.
