Coffee Cake Oatmeal Cake
Ingredients
- 1/2 banana
- 1/2 cup oats
- 1/4 cup non-dairy milk
- Splash of vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of nutmeg
- Pinch of salt
Crumble
- 1/4 cup walnuts
- 1/4 cup oats
- 1 tbsp maple syrup
- Dash of cinnamon
Preparation
Preheat the oven to 350F
Grease a mini cake pan or small oven proof bowl
Combine all ingredients together in a blender
Blend until creamy
Pour into baking dish
Clean out blender and add walnuts and oats for the crumble
Pulse for a couple sec until finely chopped
Add to a small bowl and stir in maple syrup and cinnamon
Sprinkle crumble on top of the oat cake batter
Bake for 15-20 min until toothpick inserted comes out clean (a few moist crumbs is ok)
Allow to cool for 2 min before taking out of the dish
