Coffee Cake Oatmeal Cake

Ingredients

  • 1/2 banana
  • 1/2 cup oats
  • 1/4 cup non-dairy milk
  • Splash of vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of salt

Crumble

  • 1/4 cup walnuts
  • 1/4 cup oats
  • 1 tbsp maple syrup
  • Dash of cinnamon

Preparation

  1. Preheat the oven to 350F

  2. Grease a mini cake pan or small oven proof bowl

  3. Combine all ingredients together in a blender

  4. Blend until creamy

  5. Pour into baking dish

  6. Clean out blender and add walnuts and oats for the crumble

  7. Pulse for a couple sec until finely chopped

  8. Add to a small bowl and stir in maple syrup and cinnamon

  9. Sprinkle crumble on top of the oat cake batter

  10. Bake for 15-20 min until toothpick inserted comes out clean (a few moist crumbs is ok)

  11. Allow to cool for 2 min before taking out of the dish
