Spiced Banana Bread Baked Oatmeal

Ingredients

  • 3 medium ripe bananas
  • 2 1/2 cup plant milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 1/2 cups rolled oats
  • 2 tbsp ground flaxseed
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 1 tsp baking powder

Toppings

  • Craisins
  • Chopped walnuts
  • Sliced banana

Preparation

  1. Preheat oven to 350°C

  2. Mash bananas and combine wet ingredients

  3. Mix dry ingredients

  4. Combine the wet and dry mixtures and pour into a greased baking dish

  5. Bake for 30-35 minutes

  6. Broil for 1-2 minutes while keeping a close eye to avoid burning

  7. Add toppings of choice and enjoy
