Oatmeal with Caramelized Bananas and Blueberries
Ingredients
- 1 banana
- 2 tsp maple syrup
- 1/2 cup rolled oats
- 1 cup unsweetened almond milk
- 1/2 tsp cinnamon
- Pinch of salt
- 1/2 cup frozen blueberries
- Zest of half a lemon
Preparation
Spray a non-stick saucepan with a little oil, add the banana, and drizzle with maple syrup, then cook evenly on all sides until the bananas start to brown.
Transfer the bananas to a bowl.
In the same pan, add the rolled oats, unsweetened almond milk, cinnamon, and salt, then cook on low to medium heat until thickened to your liking.
Transfer the oat mixture to a serving bowl and top with the caramelized bananas and frozen blueberries.
Add lemon zest to the blueberries for extra flavor.
