Cinnamon Peach Oatmeal Breakfast Bowl

Ingredients

  • 1 ripe peach, cubed or sliced
  • 1-2 teaspoons maple syrup
  • 1/2 cup rolled oats or quick oats
  • 1 cup unsweetened almond milk
  • 1/2 banana
  • 1/2 teaspoon cinnamon, plus more as desired
  • Pinch of salt

Optional toppings

  • Blueberries
  • Pepitas
  • Peanut butter

Preparation

  1. In a small sauté pan, add sliced peaches and maple syrup and allow to cook and soften with a pinch of cinnamon.

  2. Reserve half the sautéed peaches for topping and add the remaining ingredients to the pan.

  3. Stir and bring to a simmer and cook to thicken, about 3-5 minutes.

  4. Adjust the salt and spices to your preference and pour into a bowl and top with the remaining sautéed peaches.

Tips

  1. Optionally top with blueberries, pepitas, and peanut butter for added flavor and texture.
