Creamy Banana Apricot Oats

Ingredients

  • 1/4 cup rolled oats
  • 1/4 cup quick oats
  • Pinch of salt
  • Pinch of cardamom
  • Pinch of nutmeg
  • 2 dried apricots
  • 1/2 banana
  • 1 cup unsweetened almond milk or oatmilk
  • 1/4 cup water

Optional additions

  • 1-2 tablespoons plant-based yogurt
  • Strawberries
  • Banana slices
  • Peanut butter
  • Hemp hearts
  • Pepitas

Preparation

  1. Add all ingredients to a saucepan and bring to a simmer.

  2. Continuously stir until oats reach desired consistency.

  3. Stir in extras if desired or top with favorite toppings.

Tips

  1. To make creamier, add 1-2 tablespoons of plant-based yogurt.
