Blueberry Pie Overnight Oats
Ingredients
- 1/2 cup rolled oats
- 1 tbsp chia seeds
- 1/2 tsp cinnamon
- Pinch of nutmeg
- Pinch of cardamom (optional)
- 2 tsp maple syrup
- 1 tbsp cashew butter (optional)
- Pinch of salt
- 3/4 cup unsweetened almond milk
- 1/2 cup frozen blueberries
- 1 tsp lemon juice
Preparation
In a container or jar, mix together the oats, chia seeds, spices, salt, cashew butter, milk, and maple syrup, then stir well.
The next morning, heat the blueberries with 1 teaspoon of maple syrup and a pinch of salt in the microwave until melted and saucy.
Stir in the lemon juice and use it to top the oat mixture.
If desired, layer the oats with plant-based yogurt and the warm berries for added creaminess.
Optional toppings
Add cashew butter, blackberries, hemp hearts, cacao nibs, or other preferred toppings to customize your oats.
