Blueberry Pie Overnight Oats
Ingredients
- 1/2 cup rolled oats
- 1 tbsp chia seeds
- 1/2 tsp cinnamon
- Pinch of nutmeg
- Pinch of cardamom (optional)
- 2 tsp maple syrup
- 1 tbsp cashew butter (optional)
- 3/4 cup unsweetened almond milk
- 1/2 cup frozen blueberries
- 1 tsp lemon juice
Preparation
In a container or jar, mix together the rolled oats, chia seeds, cinnamon, nutmeg, cardamom (if using), 1 tsp maple syrup, cashew butter (if using), almond milk, and remaining maple syrup. Give it a good mix.
The morning you plan to enjoy the oats, heat up the frozen blueberries with 1 tsp maple syrup and a pinch of salt (you can do this in the microwave). Once melted, mix in the lemon juice and give it a good stir.
Top your oats with the warm blueberry mixture. Optionally, you can layer the oats with plant-based yogurt and the warm berry mixture.
Additional toppings like cashew butter, blackberries, hemp hearts, and cacao nibs can be added based on your preference.
