Lemon Poppyseed Oatmeal

Ingredients

  • 1/2 cup rolled oats
  • 2 tsp chia seeds
  • 1 tsp poppyseeds
  • Pinch of cardamom
  • Pinch of salt
  • 1 cup unsweetened almond milk
  • 1 tbsp maple syrup (or less if you prefer)
  • Zest of half a small lemon
  • 1 tbsp lemon juice

Preparation

  1. In a saucepan, combine the rolled oats, chia seeds, poppyseeds, cardamom, salt, unsweetened almond milk, maple syrup, and lemon zest.

  2. Stir well and bring the mixture to a simmer over medium heat.

  3. Allow the mixture to thicken for about 3-5 minutes, stirring occasionally.

  4. Remove the saucepan from heat and stir in the lemon juice.

  5. Adjust the sweetness to your preference by adding more or less maple syrup.

  6. Serve the lemon poppyseed oatmeal with fresh berries, sliced banana, and a few dollops of vegan yogurt.
