Strawberries and Cream Oatmeal: a Delightful Twist
Ingredients
- 3 cups unsweetened almond milk
- 1/2 cup full-fat canned coconut milk
- 2 tsp vanilla extract
- 1/2 tsp salt
- 2 1/2 cups rolled oats (gluten-free oats can be used)
- 3 tbsp ground flax seeds or chia seeds
- 1/3 cup strawberry preserves
Preparation
In a large saucepan, combine almond milk, coconut milk, vanilla extract, and salt. Stir well to combine.
Bring the mixture to a boil and then reduce the heat to a low simmer.
Add the rolled oats, ground flax seeds (or chia seeds), and strawberry preserves to the saucepan. Stir the oatmeal mixture.
Continue to stir and cook for about 10-13 minutes or until the oats have thickened.
Serve the oatmeal immediately or portion it into individual servings to enjoy throughout the week.
