Strawberries and Cream Oatmeal: a Delightful Twist

Ingredients

  • 3 cups unsweetened almond milk
  • 1/2 cup full-fat canned coconut milk
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 1/2 cups rolled oats (gluten-free oats can be used)
  • 3 tbsp ground flax seeds or chia seeds
  • 1/3 cup strawberry preserves

Preparation

  1. In a large saucepan, combine almond milk, coconut milk, vanilla extract, and salt. Stir well to combine.

  2. Bring the mixture to a boil and then reduce the heat to a low simmer.

  3. Add the rolled oats, ground flax seeds (or chia seeds), and strawberry preserves to the saucepan. Stir the oatmeal mixture.

  4. Continue to stir and cook for about 10-13 minutes or until the oats have thickened.

  5. Serve the oatmeal immediately or portion it into individual servings to enjoy throughout the week.
