Maple Cardamom Baked Oatmeal

Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup quick oats
  • 2 tsp baking powder
  • 1/4 cup shredded coconut
  • 1 tbsp ground flaxseed
  • 1 tsp cardamom
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup maple syrup
  • 1/4 cup coconut cream (or nut/seed butter)
  • 2 cups unsweetened Plant Milk
  • Optional: Toasted coconut flakes

Sweet Maple Peanut Sauce

  • 2 tbsp peanut butter
  • 1 tbsp maple syrup
  • Pinch of salt to taste
  • 4 tbsp water or more

Preparation

  1. Preheat the oven to 350°F (175°C).

  2. In a 9-in x 13-in non-stick baking dish, combine rolled oats, quick oats, baking powder, ground flaxseed, shredded coconut, cardamom, cinnamon, and salt. Mix the dry ingredients well.

  3. Pour in the maple syrup, coconut cream (or nut/seed butter), and plant milk. Stir all the ingredients together thoroughly.

  4. Use a spatula to spread the mixture evenly in the baking dish, ensuring the oats are well-distributed.

  5. Place the dish in the preheated oven and bake for 30 minutes.

  6. Once baked, remove the dish from the oven and let it cool for 10-15 minutes to set.

  7. While the oats are cooling, prepare the Sweet Maple Peanut Sauce. In a bowl, combine peanut butter, maple syrup, and a pinch of salt. Mix well.

  8. Gradually add 2 tablespoons of water to the sauce and whisk until fluffy. Adjust the sweetness and saltiness to your preference. Add more water as needed for desired consistency.

  9. Serve the baked oatmeal and drizzle with the prepared Sweet Maple Peanut Sauce.

  10. Optionally, top with toasted coconut flakes.
