Baked Cinnamon Bun Oatmeal

Ingredients

  • 50g rolled oats
  • 1 medium banana
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1 tsp vanilla powder
  • Pinch of salt
  • 1/2 tsp baking powder
  • 3 fresh dates or 1 tbsp apple sauce
  • Optional: a scoop of vanilla or caramel protein powder
  • 1 tbsp flaxseeds
  • 300ml soy milk

For the cinnamon sauce

  • 1 tbsp coconut oil or margarine
  • Brown sugar
  • Cinnamon
  • Water (if necessary)

For the cream cheese topping/icing

  • 2 tbsp vegan cream cheese
  • Yogurt or oat milk
  • Pinch of cardamom
  • Pinch of cinnamon
  • Stevia or vanilla powder

Preparation

  1. Preheat the oven to 180°C.

  2. In a mixer, add all the ingredients and mix until smooth.

  3. Grease 2 ramekins.

  4. Make the cinnamon sauce: Melt coconut oil or margarine, then mix it with brown sugar and cinnamon. Add water to thin it out if necessary.

  5. Pour the oat mix into the ramekins. Drizzle the cinnamon sauce over the oat mix and swirl it in.

  6. Bake in the oven for 22-25 minutes. Cover the top with parchment paper to prevent burning.

  7. Meanwhile, prepare the cream cheese topping/icing by combining vegan cream cheese, yogurt or oat milk, cardamom, cinnamon, and a touch of stevia or vanilla powder.

  8. Once the baked oatmeal is done, allow it to cool slightly before topping it with the cream cheese dressing and additional cinnamon sauce if desired.
