Baked Oatmeal with Banana and Almond Butter

Ingredients

  • 50g oats
  • 1 medium banana
  • 1 tsp Cinnamon
  • 1/2 tsp vanilla
  • 1/4 tsp cardamom
  • Pinch of salt
  • 2 dates
  • 1 tbsp almond butter
  • 2 tbsp chia seeds
  • 150-180ml liquid (such as plant-based milk)
  • 1/2 tsp baking powder

Preparation

  1. Preheat the oven to 200°C.

  2. In a mixing bowl, combine oats, mashed banana, cinnamon, vanilla, cardamom, salt, dates, almond butter, chia seeds, liquid, and baking powder. Mix everything until smooth.

  3. Grease a ramekin and pour the mixture into it.

  4. Top with sliced banana and a drizzle of almond butter.

  5. Bake in the preheated oven for 18-22 minutes or until the top is golden and the oatmeal is set.

  6. Remove from the oven and let it cool slightly.

  7. Enjoy your baked oatmeal!
