Baked Oats with Gooey Chocolate Center
Ingredients
- 1/2 cup rolled oats
- 1 ripe banana
- 1 tbsp plant-based yogurt or 1 tsp ground flax seed + 1 extra tbsp plant milk
- 2 tbsp unsweetened plant-based milk
- 1/4 tsp vanilla
- 1/8 tsp salt
- 1/4 tsp cinnamon
- 1 tbsp chocolate chips (plus extra for topping)
Preparation
Preheat the oven to 350°F (175°C).
In a blender, combine the rolled oats, ripe banana, plant-based yogurt (or ground flax seed + plant milk), plant-based milk, vanilla, salt, and cinnamon. Blend until smooth.
Pour half of the batter into a ramekin.
Add chocolate chips to the center of the batter in the ramekin.
Cover the chocolate chips with the remaining batter.
Place the ramekin in the preheated oven.
Bake for 20-25 minutes or until the oats are cooked and set.
Remove from the oven and let it cool slightly.
Optionally, top with extra chocolate chips.
