Baked Oats with Gooey Chocolate Center

Ingredients

  • 1/2 cup rolled oats
  • 1 ripe banana
  • 1 tbsp plant-based yogurt or 1 tsp ground flax seed + 1 extra tbsp plant milk
  • 2 tbsp unsweetened plant-based milk
  • 1/4 tsp vanilla
  • 1/8 tsp salt
  • 1/4 tsp cinnamon
  • 1 tbsp chocolate chips (plus extra for topping)

Preparation

  1. Preheat the oven to 350°F (175°C).

  2. In a blender, combine the rolled oats, ripe banana, plant-based yogurt (or ground flax seed + plant milk), plant-based milk, vanilla, salt, and cinnamon. Blend until smooth.

  3. Pour half of the batter into a ramekin.

  4. Add chocolate chips to the center of the batter in the ramekin.

  5. Cover the chocolate chips with the remaining batter.

  6. Place the ramekin in the preheated oven.

  7. Bake for 20-25 minutes or until the oats are cooked and set.

  8. Remove from the oven and let it cool slightly.

  9. Optionally, top with extra chocolate chips.

  10. Serve and enjoy!
