Pumpkin Pie Baked Oats with Coconut Oatmilk

Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup oats
  • 1/2 cup Mooala Coconut Oatmilk
  • 1 tbsp cashew butter
  • 1 tbsp protein powder
  • 2 tbsp maple syrup
  • 1/4 tsp baking powder
  • 1/4 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • Dash of ginger (optional)
  • Dash of salt
  • 1 tbsp pumpkin seeds
  • 1 tbsp crushed pecans

Preparation

  1. To a blender or food processor, add the pumpkin puree, oats, Mooala Coconut Oatmilk, cashew butter, protein powder, maple syrup, baking powder, vanilla, cinnamon, nutmeg, ginger, and salt.

  2. Blend everything until a thick batter forms.

  3. Fold in the crushed pecans and pumpkin seeds, mixing them in.

  4. Pour the batter into a ramekin or another oven-safe dish. Top with more pecans and seeds if desired.

  5. Bake the oats for 25-30 minutes at 350°F.
