Paleo Carrot Cake Donuts

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 3 tbsp maple syrup (or honey)
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/2 cup shredded carrots
  • 1/4 cup chopped pecans (optional)

Preparation

  1. Preheat oven to 350F

  2. Whisk 2 eggs then add in the rest of ingredients.

  3. Mix everything together well. Add to a greased donut pan, filling about 3/4 of the way

  4. Bake for 18-20 minutes

  5. Make icing: 1/4 cup coconut butter melted and mixed with 2 tbsp maple syrup or other option: 1/2 cup powdered sugar + 2 tsp almond milk mixed together

  6. Let the donuts cool before adding the icing
