Blueberry and Cinnamon Baked Oatmeal with Ice Cream or Yoghurt

Ingredients

  • 50g rolled oats
  • 1/2 tbsp flaxseeds or chia seeds
  • 30g vanilla or salted caramel soy protein powder
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1 small banana (or 2-3 tbsp apple sauce)
  • Optional: 1 tbsp stevia or 2 dates
  • 300ml water or soya milk
  • 1 spoonful vegan cream cheese
  • Vanilla yoghurt
  • Blueberries

Preparation

  1. In a mixer, combine rolled oats, flaxseeds or chia seeds, soy protein powder, baking powder, cinnamon, cardamom, banana or apple sauce, stevia or dates, and water or soya milk. Blend until smooth.

  2. Grease a ramekin and pour the mixture into it.

  3. Mix vegan cream cheese with a little vanilla yoghurt, a tiny pinch of cinnamon, and cardamom. Pour this mixture into the middle of the ramekin.

  4. Scatter blueberries on top of the mixture.

  5. Preheat the oven to 180°C (350°F) and bake the oatmeal for about 18-20 minutes.

  6. Once baked, remove from the oven and let it cool slightly.

  7. Top the baked oatmeal with your favorite ice cream or yoghurt/soy quark.

  8. Enjoy your delicious blueberry and cinnamon baked oatmeal!
