Blueberry and Cinnamon Baked Oatmeal with Ice Cream or Yoghurt
Ingredients
- 50g rolled oats
- 1/2 tbsp flaxseeds or chia seeds
- 30g vanilla or salted caramel soy protein powder
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1 small banana (or 2-3 tbsp apple sauce)
- Optional: 1 tbsp stevia or 2 dates
- 300ml water or soya milk
- 1 spoonful vegan cream cheese
- Vanilla yoghurt
- Blueberries
Preparation
In a mixer, combine rolled oats, flaxseeds or chia seeds, soy protein powder, baking powder, cinnamon, cardamom, banana or apple sauce, stevia or dates, and water or soya milk. Blend until smooth.
Grease a ramekin and pour the mixture into it.
Mix vegan cream cheese with a little vanilla yoghurt, a tiny pinch of cinnamon, and cardamom. Pour this mixture into the middle of the ramekin.
Scatter blueberries on top of the mixture.
Preheat the oven to 180°C (350°F) and bake the oatmeal for about 18-20 minutes.
Once baked, remove from the oven and let it cool slightly.
Top the baked oatmeal with your favorite ice cream or yoghurt/soy quark.
