Blueberry Vegan Omelette with Buckwheat Flour
Ingredients
- 2/3 cup buckwheat flour
- 1/2-2/3 cup plant milk
- 2-3 tbsp maple syrup
- 2 tbsp hemp protein powder (optional)
- 1 tbsp flax meal
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/3 tsp cinnamon
- Handful of blueberries
Preparation
Mix all the ingredients together in a bowl.
Cook the mixture on both sides, like you would cook an omelette.
Serve with your favorite toppings. Suggestions include coconut yogurt, peanut butter, dark chocolate, and shredded coconut.
