Blueberry Vegan Omelette with Buckwheat Flour

Ingredients

  • 2/3 cup buckwheat flour
  • 1/2-2/3 cup plant milk
  • 2-3 tbsp maple syrup
  • 2 tbsp hemp protein powder (optional)
  • 1 tbsp flax meal
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/3 tsp cinnamon
  • Handful of blueberries

Preparation

  1. Mix all the ingredients together in a bowl.

  2. Cook the mixture on both sides, like you would cook an omelette.

  3. Serve with your favorite toppings. Suggestions include coconut yogurt, peanut butter, dark chocolate, and shredded coconut.
