Pb-Blueberry Baked Oats (Banana-Less Recipe)

Ingredients

  • 80g rolled oats
  • 220ml liquid (water or mylk)
  • 1 tsp Vanilla powder (or sugar)
  • 1/4 tsp cardamom
  • 2 tbsp Coconut shreds
  • 1/2 tbsp Flaxseeds
  • Handful of blueberries
  • 2 tbsp peanut butter
  • 2 tsp oil
  • Dates, or other sweetener
  • 1/2 tsp baking powder
  • Oil to grease the ramekins

Preparation

  1. In a mixer, add the oats, nut butter, oil, dates, cardamom, vanilla, and a pinch of salt. (Optional: add some blueberries and coconut now, or wait until after).

  2. Mix until completely smooth. Add the flaxseeds, baking powder, blueberries, and coconut shreds. Mix well and let it sit for 5 minutes.

  3. Pour the mixture into the greased ramekins.

  4. Bake in the oven at 190°C for about 25-30 minutes. Note that baking time may vary depending on your oven.

  5. Remove from the oven and enjoy. Top with additional berries if desired.
