Pb-Blueberry Baked Oats (Banana-Less Recipe)
Ingredients
- 80g rolled oats
- 220ml liquid (water or mylk)
- 1 tsp Vanilla powder (or sugar)
- 1/4 tsp cardamom
- 2 tbsp Coconut shreds
- 1/2 tbsp Flaxseeds
- Handful of blueberries
- 2 tbsp peanut butter
- 2 tsp oil
- Dates, or other sweetener
- 1/2 tsp baking powder
- Oil to grease the ramekins
Preparation
In a mixer, add the oats, nut butter, oil, dates, cardamom, vanilla, and a pinch of salt. (Optional: add some blueberries and coconut now, or wait until after).
Mix until completely smooth. Add the flaxseeds, baking powder, blueberries, and coconut shreds. Mix well and let it sit for 5 minutes.
Pour the mixture into the greased ramekins.
Bake in the oven at 190°C for about 25-30 minutes. Note that baking time may vary depending on your oven.
Remove from the oven and enjoy. Top with additional berries if desired.
