Peanut Butter and Jam Baked Oats

Ingredients

  • 50g rolled oats
  • 1 tbsp flaxseeds
  • 25g vanilla soy protein powder
  • 1 banana
  • 1 tbsp peanut butter & more for topping
  • 1 tbsp jam & more for topping
  • Optional: pinch of cinnamon and cardamom for flavor
  • 1 tsp vanilla powder
  • 1/2 tsp baking powder
  • Pinch of salt
  • 250ml soya milk
  • Oil for greasing the ramekin

Preparation

  1. Add all the ingredients to a mixer and blend until smooth. Taste test and adjust the flavor if you desire more peanut butter or jam in the oatmeal.

  2. Preheat the oven to 180°C (350°F).

  3. Grease 1-2 ramekins and pour in the oatmeal mixture. Add additional peanut butter and jam on top.

  4. Cover the ramekin(s) with foil.

  5. Bake in the preheated oven for 18-23 minutes.

  6. Once baked, remove from the oven and enjoy. Top with vanilla soy yogurt or banana slices.
