Festive Cinnamon Roll Baked Oats

Ingredients

  • 2 tbsp ground flaxseed
  • 4 tbsp water
  • 2 cups rolled oats
  • 1/2 cup quick oats
  • 1/2 cup chopped pecans
  • 2 tsp baking powder
  • 1 tbsp cinnamon
  • 1/2 cup coconut sugar or 1/3 cup brown sugar
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1/3 cup almond butter
  • 1 1/4 cup almond milk (fortified)

Optional Glaze

  • 1/4 cup powdered sugar
  • 1/2 tbsp almond milk
  • 1/4 tsp vanilla extract

Preparation

  1. Preheat the oven to 350°F (175°C).

  2. In a small bowl, combine ground flaxseed and water. Allow it to sit and gel for about 5 minutes.

  3. In an 8x8 baking pan, mix rolled oats, quick oats, chopped pecans, baking powder, cinnamon, sugar, and salt until well combined.

  4. Add almond butter, almond milk, vanilla extract, and the prepared flax egg to the dry ingredients. Stir well with a spatula to thoroughly mix the ingredients.

  5. Using the spatula, press the oat mixture evenly over the bottom of the baking dish.

  6. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and the oats are cooked through.

  7. Remove the dish from the oven and allow it to cool for about 15 minutes.

  8. While the oats are cooling, prepare the optional glaze. In a small bowl, mix powdered sugar, almond milk, and vanilla extract until smooth.

  9. Once the oats have cooled, drizzle the optional glaze over the top.

  10. Spoon out the baked oats into bowls or plates. Enjoy as is or top with fruits or plant-based yogurt.
