Microwave Peanut Butter Oat Cookie

Ingredients

  • 3-4 tbsp oat flour
  • 1/3 tsp baking powder
  • 1 heaping tsp peanut butter (or any nut butter)
  • 2 tsp maple syrup
  • Splash of plant milk
  • Vegan white chocolate (chopped)

Preparation

  1. In a bowl, combine oat flour and baking powder.

  2. Add the heaping teaspoon of peanut butter and maple syrup to the dry ingredients.

  3. Pour in a splash of plant milk to form a dough. Mix well until all ingredients are incorporated.

  4. Gently fold in the chopped vegan white chocolate.

  5. Shape the dough into a cookie on a microwave-safe plate.

  6. Microwave the cookie for 1 minute.

  7. Allow the cookie to cool slightly before enjoying.
