Peanut Butter and Cookies Baked Oatmeal

Ingredients

  • 1/2 cup porridge oats
  • 1/2 cup oat flour
  • 1 tsp baking powder
  • Pinch of sea salt
  • 1 ripe, medium banana
  • 1 tbsp peanut butter
  • 2 tsp maple syrup
  • 1/2 cup plant milk
  • 12 mini cookies

Preparation

  1. Preheat the oven to 180C.

  2. In a bowl, mash the banana with a fork.

  3. Add peanut butter, syrup and plant milk, mix to combine.

  4. Add porridge oats, oat flour, baking powder and salt.

  5. Combine into smooth batter.

  6. Divide between 2 ramekins.

  7. Press 3 cookies into each ramekin until they sink in the batter and top with 3 more cookies.

  8. Bake for 20 minutes.

  9. Serve warm, topped with a drizzle of peanut butter.

Tips

  1. Cookies can be skipped or replaced with chocolate chips.
