Peanut Butter and Cookies Baked Oatmeal
Ingredients
- 1/2 cup porridge oats
- 1/2 cup oat flour
- 1 tsp baking powder
- Pinch of sea salt
- 1 ripe, medium banana
- 1 tbsp peanut butter
- 2 tsp maple syrup
- 1/2 cup plant milk
- 12 mini cookies
Preparation
Preheat the oven to 180C.
In a bowl, mash the banana with a fork.
Add peanut butter, syrup and plant milk, mix to combine.
Add porridge oats, oat flour, baking powder and salt.
Combine into smooth batter.
Divide between 2 ramekins.
Press 3 cookies into each ramekin until they sink in the batter and top with 3 more cookies.
Bake for 20 minutes.
Serve warm, topped with a drizzle of peanut butter.
Tips
Cookies can be skipped or replaced with chocolate chips.
