Single Serve Chickpea Cake

Ingredients

  • 1/2 cup chickpeas (canned or cooked)
  • 1/3 cup plant milk
  • 2 tbsp oat flour
  • 2 tbsp @unicornsuperfoods salted caramel protein powder
  • 1 tbsp peanut butter
  • 1-2 tbsp maple syrup
  • 1/2 tsp baking powder
  • 1/2 tsp lemon juice (to help it rise)

Preparation

  1. Add all ingredients to a blender and blend until smooth.

  2. Transfer it to a small ramekin and bake at 360F for 30 minutes.

  3. Enjoy!
