Blueberry Overnight Oats with Fruit Salad and Chocolate Ice Coffee

Ingredients

  • 200g Rolled oats
  • 1 tbsp Chia seeds
  • 1 tsp Cinnamon
  • 1/2 tsp Cardamom
  • 1/2 tsp Vanilla
  • Pinch of salt
  • Handful of blueberries and raspberries
  • Optional scoop of protein powder
  • 250ml Vanilla yogurt
  • 400-500ml Soy milk
  • Strawberries
  • Soy yogurt
  • Peanut butter
  • Alpro chocolate milk (for chocolate ice coffee)

Preparation

  1. In a bowl, combine the rolled oats, chia seeds, cinnamon, cardamom, vanilla, salt, blueberries, raspberries, and optional protein powder.

  2. Add the vanilla yogurt and soy milk to the bowl. Mix until well combined.

  3. Cover the bowl and refrigerate overnight.

  4. In the morning, give the overnight oats a stir and adjust the consistency by adding more soy milk if desired.

  5. Prepare a fruit salad by cutting strawberries into bite-sized pieces and mixing them with soy yogurt.

  6. Serve the blueberry overnight oats with the fruit salad on the side.

  7. For chocolate ice coffee, pour Alpro chocolate milk into a glass filled with ice cubes. Stir well and enjoy!
