Fluffy Blueberry Muffin Baked Oats
Ingredients
- 40g oats
- 1 scoop protein powder (salted caramel soy isolate recommended)
- 1/2 medium banana (or 1 small)
- ~90-100 ml plant milk (soy used)
- Blueberries (frozen recommended)
- 1/2 tsp baking powder
- Yogurt (for topping)
Preparation
Add the oats to a blender and blend until they become a flour-like consistency.
In the blender, combine all the ingredients except for the baking powder and blueberries. If the mixture seems too dry, add more plant milk until you achieve a smooth consistency.
Mix in the baking powder and fold in the blueberries.
Transfer the mixture to an oven-safe baking dish and place some blueberries on top.
Preheat the oven to 200°C (392°F) and bake the mixture for 25-30 minutes. For a cake-like consistency, it's recommended to bake for the full 25-30 minutes (adjust according to your preference).
Once baked, top with a mixture of yogurt, protein powder, and mashed frozen blueberries.
