Fluffy Blueberry Muffin Baked Oats

Ingredients

  • 40g oats
  • 1 scoop protein powder (salted caramel soy isolate recommended)
  • 1/2 medium banana (or 1 small)
  • ~90-100 ml plant milk (soy used)
  • Blueberries (frozen recommended)
  • 1/2 tsp baking powder
  • Yogurt (for topping)

Preparation

  1. Add the oats to a blender and blend until they become a flour-like consistency.

  2. In the blender, combine all the ingredients except for the baking powder and blueberries. If the mixture seems too dry, add more plant milk until you achieve a smooth consistency.

  3. Mix in the baking powder and fold in the blueberries.

  4. Transfer the mixture to an oven-safe baking dish and place some blueberries on top.

  5. Preheat the oven to 200°C (392°F) and bake the mixture for 25-30 minutes. For a cake-like consistency, it's recommended to bake for the full 25-30 minutes (adjust according to your preference).

  6. Once baked, top with a mixture of yogurt, protein powder, and mashed frozen blueberries.
