Vanilla-Cardamom Baked Oatmeal with Pear and Blueberry Topping

Ingredients

  • 50g rolled oats
  • 35g (1 scoop) vanilla soy protein powder
  • 2/3 tbsp chia seeds (or flax seeds)
  • 1 tsp vanilla powder (or sugar)
  • 1/2 tsp cardamom
  • 2/3 tsp baking powder
  • Optional: 1 banana or 2 tbsp apple sauce
  • Approximately 150ml oat milk
  • Approximately 120ml oat cream (or soy cream)

Topping

  • Pears
  • Blueberries
  • Vanilla ice cream or quark/yogurt

Preparation

  1. In a mixer, combine all the ingredients and mix until a thick, but pourable mixture is formed.

  2. Preheat the oven to 200°C (392°F).

  3. Grease a ramekin and pour the mixture into it.

  4. Bake in the oven for about 18-20 minutes. Check after 15 minutes, as oven settings may vary.

  5. Once baked, remove from the oven and top with pears, blueberries, and a scoop of vanilla ice cream or quark/yogurt.

  6. Finally, the most important step: Eat and enjoy!
