Saffron Baked Oatmeal

Ingredients

  • Approximately 50g rolled oats
  • 30g vanilla or salted caramel soy protein powder
  • 1/2 tablespoon flaxseeds
  • 1/2 teaspoon baking powder
  • 0.5g saffron
  • Pinch of salt
  • 1/2 teaspoon vanilla powder
  • 1 banana
  • 300ml soya milk
  • 1/2 tablespoon baking powder
  • Some oil to grease the ramekins
  • Vegan cream cheese, for topping

Preparation

  1. Preheat the oven to 180°C.

  2. In a mixer, combine all the ingredients and mix until smooth.

  3. Grease 1-2 ramekins with oil.

  4. Pour the oatmeal mixture into the greased ramekins.

  5. Bake in the middle of the oven for approximately 18 minutes.

  6. Once done, serve warm and top with vegan cream cheese.

  7. Enjoy!
