Coconut Zucchini Baked Oatmeal
Ingredients
- 3 cups unsweetened almond milk
- 1/2 cup full-fat coconut milk
- 2 tsp cinnamon
- 1/2 tsp salt
- 2 1/2 cups rolled oats
- 3 tbsp ground flax seed
- 1 large zucchini, grated
Preparation
In a large saucepan, combine almond milk, coconut milk, cinnamon, and salt. Stir well to combine.
Place the saucepan on the stove and bring the mixture to a boil.
Reduce the heat to low and let the mixture simmer.
Add rolled oats, ground flax seed, and grated zucchini to the saucepan.
Stir the oatmeal mixture and continue to cook for about 10 to 13 minutes, or until the oats have thickened to your desired consistency.
Once the oatmeal is cooked, serve it immediately or portion it into individual serving containers for the week.
