Creamy Apple Cake
Ingredients
- 4 apples, diced
- 180g coconut sugar
- 200g unsweetened applesauce
- 100g olive oil
- 1 tsp vanilla extract
- 320g all-purpose flour
- 240g soy milk
- 10g baking powder
- Pinch of salt
- Topping: 25g vegan butter, 60g coconut sugar, 1 tsp cinnamon
Preparation
Preheat the oven to 180C (fan-assisted). Grease and flour a baking tin (Ø24cm).
Cut the apples into small dice.
In a bowl, mix the sugar with applesauce. Then add the olive oil and vanilla extract.
Slowly add in the flour, baking powder, and a pinch of salt. Mix with a whisk.
Pour in the soy milk and mix until homogeneous.
Add half of the batter in the mold. Then add all the diced apples and cover with the other half of the batter.
Mix all the topping ingredients together and place the bits on top.
Bake for 1h - 1h15 or until the toothpick comes out clean.
