Sticky Garlic Sesame Potatoes

Ingredients

  • 900g potatoes (firm type or use delicatess potatoes)
  • 240ml water
  • 5 tbsp soya sauce (Japanese)
  • 3 tbsp syrup
  • 1 tsp garlic powder (or use 2-3 minced garlic cloves)
  • 1/4 tsp chilli powder (or use sambal oelek)
  • 2 tsp sesame oil
  • 2 tsp lime juice
  • Pinch of salt
  • 1-2 tsp cornstarch
  • Oil
  • Spring onion (for topping)
  • Sesame seeds (for topping)

Preparation

  1. Peel the potatoes and chop them into small pieces, preferably smaller than pictured, as they will fry quicker.

  2. Heat a large frying pan with a generous amount of oil over medium heat. Fry the chopped potatoes until they become crispy and begin to soften, stirring occasionally to prevent burning or sticking. This should take about 15 minutes.

  3. While the potatoes are frying, prepare the sauce. In a bowl, combine soya sauce, syrup, garlic powder (or minced garlic), chilli powder (or sambal oelek), sesame oil, lime juice, and a pinch of salt. Mix well.

  4. Add 1-2 teaspoons of cornstarch to the sauce, mixing it in well. Set the sauce aside.

  5. Once the potatoes are beginning to soften and have turned crispy, give the sauce another mix (to ensure the cornstarch is well incorporated) and pour it over the potatoes.

  6. Allow the potatoes to simmer in the sauce until the sauce thickens and coats the potatoes evenly.

  7. Once the sauce has thickened and the potatoes are coated, remove from heat.

  8. Serve the sticky garlic sesame potatoes as is, or top with chopped spring onion and sesame seeds for extra flavor and texture.
