Easy Vegan Chicken Noodle Stir-Fry Bowl

Ingredients

  • Noodles of choice (e.g., rice noodles, ramen noodles)
  • Vegan chicken pieces (or tofu, tempeh, seitan, beans)
  • 1 red onion
  • 1 red bell pepper
  • Green peas
  • Edamame beans

Optional: premade sweet and sour sauce OR homemade sauce

  • 2 tbsp soy sauce
  • 1/2 tbsp syrup
  • 1 tsp sambal oelek (chili paste)
  • Salt and pepper
  • Optional: 1/2 tsp sesame oil

Preparation

  1. Boil the noodles according to the package instructions.

  2. In a large pan or wok, fry the vegan chicken pieces (or other protein) until crispy.

  3. Add sliced red onion, sliced red bell pepper, green peas, and edamame beans to the pan. Continue frying until the vegetables are slightly tender and have a crisp texture.

  4. If using a premade sweet and sour sauce, pour it over the stir-fry and mix well. If making your own sauce, mix together soy sauce, syrup, sambal oelek, salt, pepper, and optional sesame oil. Pour the sauce over the stir-fry and mix thoroughly. Cook for another few minutes to allow the flavors to meld.

  5. Once everything is cooked and combined, add the boiled noodles to the pan and toss them with the stir-fry mixture to coat them in the flavorful sauce.

  6. Serve the stir-fry in a big bowl.

  7. Optionally, garnish with peanuts (or pumpkin seeds) for crunch, chili flakes, chopped coriander, and any additional vegetables you have on hand.
