Vegan Masala French Toast

Ingredients

  • 4 slices of medium-thick white toast bread (use gluten-free bread for a gluten-free option)
  • 300g block of silken tofu
  • 2 tbsp gram flour (besan / chickpea flour)
  • 1 tbsp plain flour (use gluten-free flour for a gluten-free option)
  • 1/2 cup plant milk of choice (such as almond milk)
  • 1/2 red onion, finely chopped
  • 1/2 tomato, finely chopped
  • Fresh coriander, finely chopped
  • 1 garlic clove, crushed
  • 1 green chilli, finely chopped (such as green bird’s eye chilli or green finger chilli)
  • 3/4 tsp smoked paprika powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp cumin powder
  • 2/3 tsp coriander powder
  • Pinch of turmeric powder
  • 1/2 tsp Himalayan salt
  • 1/4 tsp ground black pepper
  • To garnish: fresh coriander (cilantro), chopped, red chilli flakes

Preparation

  1. Remove the silken tofu from the packaging and transfer it to a blender. Blend the tofu with almond milk at low speed to create a vegan "egg" mixture. Transfer the mixture into a flat soup bowl, which will be used for soaking the bread slices.

  2. Finely chop the tomato, red onion, green chilli, and fresh coriander.

  3. Add the plain flour and gram flour to the "egg" mixture, followed by all the spices. Whisk everything together until smooth and well combined. The mixture should have a thin pancake batter consistency.

  4. Add the chopped red onion, tomato, green chilli, and fresh coriander to the french toast batter. Mix well.

  5. Take one slice of bread and dip it into the batter, ensuring that it is well coated on both sides.

  6. Fry the coated bread on a non-stick pan for 2-3 minutes. You can add a bit of oil if desired. Flip the bread slice and fry it on the other side for an additional 2-3 minutes, until golden and crispy. Repeat this step for the remaining slices.

  7. Transfer the cooked French toast slices to a plate and garnish with freshly chopped coriander and red chilli flakes.

  8. Serve the Vegan Masala French Toast with ketchup, green chutney, and a cup of masala chai.
