Spicy Vegan Noodle Bowl
Ingredients
- 120g rice noodles (or noodles of choice)
- ~100g mix of grated carrots and cabbage (or grated vegetables of choice)
- 1/4 zucchini, chopped into small pieces or spiralized
- 350g vegan mince (preferably not too mushy)
- 3-4 tbsp oil
- 2 garlic cloves, mashed
- 2 tsp sambal oelek (use more for extra spiciness)
- 1 tsp sesame oil
- 2 tbsp soy sauce
- A few drops of apple cider vinegar or rice vinegar
- Salt and pepper
- Crushed peanuts, cilantro, and spring onion for serving
Preparation
Boil the rice noodles for 2-4 minutes until soft. Then place them in cold water and allow them to cool.
In a frying pan, add the oil, vegan mince, grated carrot/cabbage mix, and mashed garlic. Fry until the mince starts to firm up.
Add the soy sauce, sambal oelek, sesame oil, salt, pepper, and a few drops of apple cider vinegar or rice vinegar. Taste and adjust the seasoning according to preference.
Fry on medium heat for 5-10 minutes. Add more oil if necessary.
Add the rice noodles to the frying pan and mix until combined. Fry for another few minutes.
Serve the noodle bowl with crushed peanuts, cilantro, and spring onion.
