Decadent Chocolate Brownies with a Mindful Twist

Ingredients

  • 180g all-purpose flour
  • 80g sugar
  • 75ml cacao powder
  • 1 tsp salt
  • 1 tbsp vanilla powder
  • 1 espresso shot (around 25-30ml)
  • 120ml plant-based milk (e.g., oat milk)
  • 150ml oil (coconut or rapeseed) or melted margarine
  • Chocolate chips or chocolate cut into squares
  • Sea salt

Preparation

  1. Preheat the oven to 175°C.

  2. In a bowl, sift together the flour, sugar, cacao powder, salt, and vanilla powder.

  3. Add the espresso shot, plant-based milk, and oil (or melted margarine) to the bowl. Mix until all ingredients are well combined.

  4. Fold in some chocolate chips to the batter.

  5. Grease a pie or cake form and pour the batter into it.

  6. Place additional chocolate chips on top of the batter and sprinkle with a pinch of sea salt.

  7. Bake in the preheated oven for about 18-20 minutes. If you prefer a fudgy texture, aim for around 15-17 minutes.

  8. To test if the brownies are done, insert a toothpick or knife into the center – it should come out mostly clean or with a few moist crumbs if you like them fudgy.

  9. Allow the brownies to cool for a while before enjoying. For an even better experience, refrigerate them.
