Decadent Vegan Chocolate Nut Bars
Ingredients
Bottom Layer
- 2/3 cup oats
- 1/4 cup almonds
- 1/4 cup coconut flakes or shredded coconut
- a pinch of salt
- 6 small dates
- 1/4 tsp vanilla powder
- 2 tbsp coconut milk
- 1 tbsp nut butter
Caramel Layer
- 200g dates
- 4-5 tbsp coconut cream or milk
- 1/4 tsp vanilla powder
- 1 tbsp nut butter
- a pinch of salt
Chocolate (Homemade)
- 2/3 cup cacao butter
- 4 tbsp raw cacao powder
- 5 pieces raw chocolate
- 6 tbsp maple syrup
- (Alternatively, melted vegan chocolate can be used)
Preparation
In a high-speed food processor, combine all the ingredients for the bottom layer until a sticky dough forms. Press the dough flat into a small square baking tin.
Using the food processor, mix all the ingredients for the caramel layer until well combined. Pour the caramel sauce over the bottom layer and allow it to cool in the freezer for 2 hours or more.
In a microwave-safe bowl, melt the cacao butter, raw chocolate, and maple syrup for 1 minute. Stir until fully melted, then add the raw cacao powder.
Remove the baking tin from the freezer and cut the bars into smaller square bites. Dip each square into the chocolate sauce and place them on a plate covered with parchment paper. Return the bars to the freezer to cool down. Store them in a box in the freezer.
