Irresistible Single Serve Fudgy Chocolate Cake
Ingredients
- 60g all-purpose flour
- 90g sugar
- 50ml cacao powder (about 3 tbsp)
- 1 tsp baking powder
- Pinch of salt
- Pinch of vanilla sugar
- 50g vegan margarine, melted
- 50-60ml vegan milk or cooking cream
- Handful of chocolate chips
- Soya cream & berries (for topping)
- Roasted hazelnuts (optional topping)
Preparation
Preheat the oven to 180°C (350°F).
Grease 1-2 ramekins or single-serve forms.
In a mixing bowl, sift together the all-purpose flour, sugar, and cacao powder.
Add the baking powder, salt, and vanilla sugar to the bowl. Mix well.
Melt the vegan margarine and add it to the dry mixture, followed by the vegan milk or cooking cream. Mix until smooth.
Pour the batter into the prepared ramekins.
Top the batter with chocolate chips.
Bake in the preheated oven for approximately 15-17 minutes. The cakes should be slightly gooey when taken out.
Allow the cakes to cool for about 10-15 minutes to achieve a fudgy texture.
Once cooled and fudgy, top the cakes with soya cream, berries, and optionally roasted hazelnuts.
