Pumpkin Spice Cinnamon Biscoff Swirl Pancakes

Ingredients

  • 60g plain flour
  • 30g soy isolate
  • 1 tsp ground flax seeds
  • 100g pumpkin puree
  • 180ml unsweetened almond milk
  • 1/4 tsp pumpkin spice
  • 1/4 tsp baking powder
  • Biscoff cinnamon swirl: 1 tbsp Biscoff, 1 tbsp syrup, 1/4 tsp cinnamon

Preparation

  1. In a mixing bowl, combine the plain flour, soy isolate, ground flax seeds, pumpkin puree, unsweetened almond milk, pumpkin spice, and baking powder.

  2. Mix all the pumpkin pancake ingredients together until well combined.

  3. Heat a pan over medium heat and lightly grease it.

  4. Pour the pancake batter into the pan to form pancakes of your desired size.

  5. Prepare the Biscoff cinnamon swirl mixture by combining 1 tablespoon of Biscoff, 1 tablespoon of syrup, and 1/4 teaspoon of cinnamon.

  6. Transfer the swirl mixture into a piping bag.

  7. Pipe a swirl of the Biscoff cinnamon mixture onto the center of each pancake in the pan.

  8. Flip the pancakes to cook on the other side.

  9. Once cooked, stack the pancakes to create a delicious stack.

  10. Serve the pumpkin spice cinnamon Biscoff swirl pancakes with your favorite toppings, such as vegan whipped cream.
