Oatmeal Raisin Cookie Oatmeal

Ingredients

  • 1/2 cup rolled oats
  • 1/2 tbsp ground flax seeds
  • 1/2 tsp cinnamon
  • 1 tbsp maple syrup
  • 1 cup unsweetened almond milk
  • 1/4 tsp vanilla extract
  • 1 tbsp raisins (or chocolate chips if you hate raisins)
  • 1 tbsp cashew butter (peanut butter, almond butter, tahini or sun butter all work here too)
  • Pinch of salt

Preparation

  1. In a saucepan over medium heat, add oats, ground flax seeds, almond milk, maple syrup, cinnamon, and vanilla extract.

  2. Bring the mixture to a simmer and stir frequently, allowing the oats to thicken for about 3-5 minutes.

  3. Remove the saucepan from heat and stir in the cashew butter, raisins (or chocolate chips), and a pinch of salt.

  4. Pour the oatmeal into a bowl.

  5. Top the oatmeal with desired toppings. The author suggests banana, granola, and strawberries.
