Oatmeal Raisin Cookie Oatmeal
Ingredients
- 1/2 cup rolled oats
- 1/2 tbsp ground flax seeds
- 1/2 tsp cinnamon
- 1 tbsp maple syrup
- 1 cup unsweetened almond milk
- 1/4 tsp vanilla extract
- 1 tbsp raisins (or chocolate chips if you hate raisins)
- 1 tbsp cashew butter (peanut butter, almond butter, tahini or sun butter all work here too)
- Pinch of salt
Preparation
In a saucepan over medium heat, add oats, ground flax seeds, almond milk, maple syrup, cinnamon, and vanilla extract.
Bring the mixture to a simmer and stir frequently, allowing the oats to thicken for about 3-5 minutes.
Remove the saucepan from heat and stir in the cashew butter, raisins (or chocolate chips), and a pinch of salt.
Pour the oatmeal into a bowl.
Top the oatmeal with desired toppings. The author suggests banana, granola, and strawberries.
