Blueberry Pie Overnight Oats

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1/2 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of cardamom (optional)
  • 2 tsp maple syrup
  • 1 tbsp cashew butter (optional)
  • 3/4 cup unsweetened almond milk
  • 1/2 cup frozen blueberries
  • 1 tsp lemon juice
  • Pinch of salt

Preparation

  1. In a container or jar, mix together the oats, chia seeds, spices, salt, cashew butter, milk, and maple syrup. Stir well.

  2. Refrigerate the mixture overnight.

  3. The next morning, heat the blueberries with 1 teaspoon of maple syrup and a pinch of salt in the microwave until softened.

  4. Stir the heated blueberries with lemon juice and top the oats with the mixture.

  5. Optionally, layer the oats with plant-based yogurt and add desired toppings.

  1. You can add toppings like cashew butter, blackberries, hemp hearts, or cacao nibs to customize.
