Blueberry Pie Overnight Oats
Ingredients
- 1/2 cup rolled oats
- 1 tbsp chia seeds
- 1/2 tsp cinnamon
- Pinch of nutmeg
- Pinch of cardamom (optional)
- 2 tsp maple syrup
- 1 tbsp cashew butter (optional)
- 3/4 cup unsweetened almond milk
- 1/2 cup frozen blueberries
- 1 tsp lemon juice
- Pinch of salt
Preparation
In a container or jar, mix together the oats, chia seeds, spices, salt, cashew butter, milk, and maple syrup. Stir well.
Refrigerate the mixture overnight.
The next morning, heat the blueberries with 1 teaspoon of maple syrup and a pinch of salt in the microwave until softened.
Stir the heated blueberries with lemon juice and top the oats with the mixture.
Optionally, layer the oats with plant-based yogurt and add desired toppings.
Tips
You can add toppings like cashew butter, blackberries, hemp hearts, or cacao nibs to customize.
